Peach Crisp

Peach anything is good, but peach crisp has got to be the best choice compared to pie or cobbler. If you serve it warm with a little vanilla bean ice cream on top – oh yeah! Mmm mmm good.
Serves: 12 – 16                        Preheat Oven Temp: 375°

Ingredients List
4 cups canned fresh peaches, sliced in juice  **Use fresh if they are in season**
3 Tb. flour
1/8 cup apricot preserves
4 Tb. honey
2 tsp. lemon juice
1/8 tsp. nutmeg

Crisp Topping:
1 Tb. maple syrup
1/2 tsp. vanilla
1/4 cup whole oats
1 Tb. cornmeal
1/4 tsp. cinnamon


1 Fold the peaches into the flour and dump them into a square baking dish.
2 Mix the apricot preserves with the honey, lemon juice, and nutmeg. Spoon the mixture over the peaches and bake for 30 minutes.
3 Remove the dish from the oven and set aside. Mix the topping ingredients together in a small bowl, and then crumble it over the top of the peach filling.
4 Bake an additional 15 minutes.
5 Serve hot with ice cream.
