Fire up the grill for some delicious steak and veggies! These can be cooked over your indoor or outdoor grill. If you have a cast iron grill, the veggies grill perfectly. You can also cut the steaks into bite size chunks and skewer them with veggies to make grilled shish kebabs.

4 (6 oz.) sirloin steaks
1 Tb. olive oil
1-2 medium red and green bell peppers, cut into strips
6 oz. button mushrooms, sliced
1 small onion, thinly sliced
1/2 tsp. salt
1/2 tsp. pepper
1 Using a cast iron grill, heat a splash of olive oil over high heat for 20 seconds.
2 Brush the veggies with olive oil and place on the hot grill for 2-3 minutes.
3 Move the veggies to the edges of the grill to keep warm but slow the cooking.
4 Season the steaks with salt and pepper and sear them over high heat for 1-2 minutes on each side.
5 Turn the heat down to medium-high and cook 6-7 minutes on each side for medium doneness. Check for desired doneness to avoid overcooking.
*Depending on the thickness of the steaks, well-done steak could take 8-10 minutes per side.
6 Allow steaks to rest 5 minutes before cutting, and serve with the hot veggies.
