This  is one of my dad’s favorites. I was never very excited when I got home from school and could smell the crock pot full of sauerkraut cooking. I knew it was going to be either sausages or pork chops. It’s not one of the meals I would ask for, but nevertheless, it was a regular family favorite.

Pork Chops and Sauerkraut
Serves:     6        Preheat Oven Temp:  N/A

Ingredients List
2 Tb. vegetable oil
6 pork rib or loin chops
1/2 tsp. salt
1/4 tsp. black pepper
1 medium onion, chopped
1 3/4 cups apple juice
2 (16oz.) bags sauerkraut, drained
2 medium red apples, cut in chunks (optional)
2 tsp. brown sugar

Step-by-Step

1 Put the oil in a skillet and heat to medium-high. Add the pork chops to the oil and just brown on both sides. Remove the chops to a crock pot and sprinkle with the salt and pepper.
2 Put the onion in the used skillet and cook until tender. Add some of the apple juice to the skillet to help remove some of the brown bits of pork stuck on the skillet surface.
3 Put the onion mixture, the remaining apple juice, the sauerkraut, apples and brown sugar in the crock pot and stir to combine.
4 Cook on low for 7 – 8 hours or on high for 4 – 5 hours.
