Carne Asada Steak Tacos
Serves: 4-6 Preheat Oven Temp: N/A
2 lbs. flank steak
1 jalapeno pepper, chopped
4 garlic cloves, chopped
1 small bunch of fresh cilantro, chopped
1 tsp. cumin
2 limes, sliced
2 Tb. vinegar
1/2 tsp. sugar
1/2 cup oil (olive or canola)
1 Put the flank steak in a large Ziploc bag.
2 Combine the remaining ingredients and pour the mixture into the bag to cover the steak. Make sure that each piece of the steak is well coated and refrigerate for at least 1 hour (2-3 hours is going to be ideal).
3 Preheat the grill to medium-high heat. Oil the grates to prevent the steak from sticking.
4 Take the steak out of the bag and place it on the grill, season with salt and pepper.
5 Grill the steak for a few minutes on each side, until it reaches your doneness liking.
6 Remove the steak from the grill and let it rest on a cutting board for about 5 minutes.
7 Slice the steak across the grain into thin diagonal strips and serve with tortillas, salsa, etc.
Hints and Tips
Serve with pico de gallo or salsa and chopped onion, cilantro, and avocado.
Warm the tortillas for 30 seconds on each side in a dry skillet or on the grill, or in the microwave on a paper towel for 15 seconds each (high power).
