This recipe makes absolutely wonderful soft cookies! If you like lemon desserts you will probably add this one to your list of favorites. It’s simple, not from “scratch” per se – but quick and easy. I found this one while clicking around Pinterest – you know how you go from pin to pin and somehow end up at a website somewhere far from where you started? I’m pretty sure this one belongs to a blog site called Just Another Day in Paradise.

Lemon Supreme Cookies
Makes:     2 dozen        Preheat Oven Temp:    350

Ingredients List
1 box of Lemon Supreme cake mix
1 (8 oz.) tub Cool Whip topping, thawed
1 egg

Step-by-Step

1 Pour the lemon cake mix into a large bowl and add the Cool Whip and egg.
2 Use a mixer to combine. The dough will be thick and like taffy.
3 Drop the dough with a heaping tablespoon (2 inches apart) onto a greased cookie sheet.
4 Bake at 350 for 10 minutes.
5 Remove from the oven and let the cookies cool on the cookie sheet for about 10-15 minutes.
6 Cool completely on a wire rack. Serve and enjoy!

Hints and Tips
You can enjoy these perfectly fine baked as directed, but I decided to add a little sprinkle of sugar on them part-way through baking. Of course, you can’t roll these in sugar before baking, but once the cookies spread out thin and start baking – maybe 6 or 7 minutes into it, I sprinkled the sugar on real quick and put them back in to finish cooking. I like the “sugar cookie” texture it gets on top.
