Serves: 4 Preheat Oven Temp: 350
1 Tb. vegetable oil 1 Tb. parsley, minced
2 Tb. minced green bell pepper 1 Tb. sugar
2 Tb. minced red bell pepper 2 tsp. salt
1/2 cup minced red onion 1-1/2 tsp. dried thyme
1/3 cup minced carrot 1 tsp. black pepper
5 tsp. minced garlic 1 tsp. dried oregano
3 eggs 1 tsp. ground sage
2-1/2 lbs. ground beef 1/2 tsp. paprika
3/4 cup bread crumbs 3/4 cup whole milk
1 Preheat oven to 350 F.
2 Heat 1 Tb. of oil in a medium saute pan over medium/low heat.
3 Sauté the minced green and red bell peppers in the oil for 4-5 minutes. Add the minced onion, carrot, and garlic and cook for an additional 4-5 minutes, until soft – not browned.
4 Beat the eggs in a large bowl. Add the ground beef, sautéed veggies, and the remaining ingredients – except the bread crumbs.
5 Mix well with your hands until everything is combined evenly.
6 Work in the bread crumbs a little bit at a time until mixed into the meat mixture.
7 Press the meatloaf mixture into a 9 x 5-inch loaf pan and bake for 1 hour.
8 Remove the pan from the oven and cool for 20 – 30 minutes. (Leave the meatloaf in the pan!)
9 Preheat the broiler. Remove the meatloaf from the pan and slice it into 1-inch thick slices.
10 Arrange the slices on a baking sheet and broil for 2 – 3 minutes.
Hints and Tips
Cover the slices with ketchup before broiling, or serve with mushroom gravy after broiling.
Sometimes I see variations of meatloaf where you can substitute some of the ground beef with ground pork. I’ve not tried this myself, but I don’t see why you couldn’t do the same thing in this recipe – using about 1 lb. of pork and 1-1/2 lb. of beef.
