BBQ Pulled Pork

3 – 5 lb. boneless pork roast, trimmed
1 large can of frozen apple juice concentrate
1 package of Lipton’s onion soup mix
3 Tb. vinegar (any kind)
1/4 cup brown sugar (omit if you do not want a sweet marinade)
1-2 cups Sweet Baby Ray’s BBQ sauce (or BBQ sauce of your choice)
1 Put the pork roast in a crock pot.
2 In a saucepan, combine all of the remaining ingredients, except the BBQ sauce.
3 Heat until the apple juice is melted and the soup mix is dissolved completely.
4 Pour the heated mixture over the roast and put the crock pot on the high setting.
5 Cook on high for at least 4 hours, or until the roast is cooked thoroughly and falls apart easily.
6 Remove the roast from the juices and let cool on a plate for a few minutes. You can toss out the remaining juices, we don’t need them for this recipe any longer.
7 Shred the roast with a fork until you have all the roast into pulled style shreds.
8 Return the shredded pork to the crock pot and add enough BBQ sauce to give it a thick, saucy texture perfect for sandwiches.
9 Simmer in the crock pot on low until ready to eat, ideally at least 1 hour for best taste.
10 Serve as desired. (I prefer it on pub style buns with a side of coleslaw and chips.)
