Chocolate Bundt Cake
Serves: 10 – 12 Preheat Oven Temp: 350
1 pkg (18 oz) chocolate cake mix
1 pkg (3.9 oz) instant chocolate pudding mix
3 Tb. baking cocoa
1-3/4 cups milk
2 cups semisweet chocolate chips
1 In a large mixing bowl, combine cake and pudding mixes, cocoa, milk and eggs. Beat on low speed until moistened and then beat on medium speed for 2 minutes.
2 Stir in the chocolate chips.
3 Pour into a greased and floured 10-inch bundt pan.
4 Bake at 350 for 55 – 60 minutes or until a toothpick inserted into the center comes out clean.
5 Cool for 10 minutes. Remove from pan to a wire rack to cool completely.
6 Dust with confectioners’ sugar.
Hints and Tips
This cake is also good topped with icing or a chocolate glaze instead of the powdered sugar.
Try this chocolate glaze –
1 (14oz.) can sweetened condensed milk
1 cup semi-sweet chocolate chips
1 tsp. vanilla extract
Over medium heat, combine the sweetened condensed milk and chocolate chips. Cook, stirring constantly, until the chips are melted and the mixture is smooth. Don’t allow the glaze to bubble.
Remove from the heat and stir in the vanilla. Cool slightly before drizzling over cake.
