This recipe  is similar in taste to the KFC coleslaw recipe. The secret to getting the KFC texture is slicing the cabbage into very small pieces. Carrots can be shredded with a cheese grater. If you prefer the more traditional larger shred, slice it into larger pieces. Letting it sit overnight is best for flavor. Sometimes if I’m short on time I just toss a bottle of Wish Bone coleslaw dressing into some cabbage shred, but if time allows this homemade version is much better.

Serves:     6        Preheat Oven Temp:  N/A

Ingredients List
1/2 cup mayonnaise
1/3 cup granulated sugar
1/2 cup whole milk
4 tsp. lemon juice
1 tsp. white vinegar
1/4 tsp. salt
1/4 tsp. celery seed
8 cups finely shredded green cabbage
1 cup finely shredded red cabbage
1 cup shredded carrots
black pepper to taste

Step-by-Step

1 Whisk together mayonnaise, sugar, milk, lemon juice, vinegar, salt and celery seed in a large bowl until sugar is dissolved.
2 Stir in cabbage and shredded carrots.
3 Cover and chill at least four hours. Stir before serving.

This coleslaw is great either on the side or piled on top of BBQ pork sandwiches!
