Restaurant Style Salsa

1 can (28 oz.) tomatoes with juice
2 cans (10 oz.) Rotel or similar (diced tomatoes and green chilies)
1/4 cup chopped onion
1 clove chopped garlic
1 fresh jalapeno pepper, sliced and chopped lightly
1/4 tsp. sugar
1/4 tsp. cumin
1/2 cup cilantro chopped
1 Throw all ingredients into a blender or food processor.
Note: If your blender is not large enough, process the ingredient in batches and mix everything together in a large bowl.
2 Pulse until the salsa reaches the consistency you like, less pulsing for chunky, more for a smoother salsa texture. Test seasoning flavor and adjust as needed for your taste.
3 Refrigerate for 1 hour before serving.
Great with cheese nachos or any Mexican dish including tacos and burritos. The perfect accompaniment to Mexican Style Shredded Chicken.
