3 cucumbers (with or without peel)
1 red onion
1/2 cup white or apple cider vinegar
1/2 cup water
1/3 cup sugar
salt and pepper to season
1 Slice cucumber and onion into thin slices and place in shallow dish or bowl
2 Stir together vinegar, water and sugar. Pour over onions and cucumber.
3 Salt and pepper to taste. Cover and refrigerate for at least one hour.
The longer these marinate the better they get. I usually make this the day before I want to have it but it’s also good if you make it just an hour or two before.
